Spinach Dip on a Diet?

It’s made out of non fat yogurt, 1 table-spoon olive oil, 1 cup Sautéed Spinach & 6 cloves of garlic , 1/2 tsp. of Fresh squeezed lemon juice, Sea salt and Freshly Cracked Black Pepper to taste.  (Taste, as you add ingredients and add more until desired taste is reached)

I make my own Greek yogurt, it’s simple

Place 2 cups of non-fat plain yogurt (Nancy’s) in a cheese cloth.  Then hang the cheese cloth in a jar and let the water drip out for 4 hours or overnight (keep it refrigerated) , there you have it, Greek Yogurt! See picture attached for demonstration.

1 Baking Pan grease it with Olive Oil, 1 -2 tablespoons 240

…And then there was a Bitter Melon

Quantity Ingredients Prep Directions
4 Bitter Melons Wash Make an incision in the mid section, then remove the seeds*
1/2 cup Olive Oil or any oil Place in a baking dish
1 cup Onions cut in 4 pieces Place all ingredients in the food processer, pulse for about 60 seconds, do not turn the filling it into a paste. Brush olive oil inside and around the melons. Pack the melon with prepared filling. Get a deep baking pan/dish out and pour 1/4 cup of olive oil, place the bitter melons in the baking pan/dish and bake in the oven for 2 hours or until golden brown. Temp 350F
4 Garlic Cloves whole
1tbsp Ginger Chopped
4 Thai Peppers Optional
1 tsp Himalayan Salt add or reduce to taste
1 tbsp. Redwind Spice see post 6/19/14
Bitter melon Seeds*
1 tsp. Turmeric powder add to the filling
I serve this in a Rice Wrap.   Brand: Food For Life, Brown Rice Tortillas (Gluten and Wheat Free). Warm the wrap, place 1 bitter melon on the wrap, top it with plain yogurt, enjoy!

Cookies Gone Nuts!

Great for a healthy snack and super quick to make!

Quantity Ingredients Directions
1 1/4 cups Almond Flour Mix all ingredients together in a bowl and combine until a consistency is reached. Distribute the mixture in 7 balls. Press the balls into desired shapes, place on the baking sheet. Bake for 10 – 12 minutes| 350 degree F| Let cool for about 15 – 20 minutes before consuming.
1/2 tsp Baking Soda
1/4 cup Coconut Oil
Pinch of Sea Salt
1 tbsp. Vanilla Extract
1/4 cup Raw Honey
1 tsp Cinnamon
2 tsp Raisins (optional)

Hygieia’s Cauldron

This is a super food dish.  One of my favorite dishes growing up.  I named the dish after the Greek goddess of health, Hygieia (pronounced “Hugieia”).

If you like spinach dip, or better yet, a creamy artichoke dip, this dish has a similar taste.

Pair it with Rice or Non-GMO Corn Chips, or eat it as is.

Quantity Ingredients Prep Directions
14oz Mustard Greens steamed or cooked until wilted Refrigerate for 10 – 15 minutes, once cooled, place in food processer until you get a fibrous, creamy texture.
6 oz. Spinach steamed or cooked until wilted
5oz Paneer cut in large cube shape Buy at Indian grocery store, whole foods, New Seasons.
1 – 2 tbsp. Olive Oil or use butter as alternative Place in a pan, med high heat
1tsp Cumin Seeds whole seeds add to hot oil and let sizzle for 5 – 10 seconds
1 small Onion diced or thinly sliced add to oil, cook until translucent
2 tbsp. Ginger Shredded or chopped add with onions, cook until slightly golden brown
6 Garlic cloves pressed and chopped add to skillet 1 minute after you add ginger, stir for 60 sec
1/2 tsp Turmeric powder form add
1/2 tsp Chili Pepper optional add
1 tsp Himalayan Salt add more to taste add
1 tsp Black Pepper freshly crushed add
add the mustard greens and spinach puree, along with paneer.   Let heat for 2 – 4 minutes.   Serve with Rice or chips

Ginger Honey Tea

Tea Time!!

Quantity Ingredients Directions
1 1/2 cup Distilled Water Add water and ginger to the pot, bring it to boil, remove after 1 minute, use a strainer, pour into a cup, add honey and lemon juice, stir and Enjoy!
1 tsp Freshly Shredded Ginger
1 tsp Raw Honey
1/2 tsp Freshly squeezed Lemon Juice
